When you are in a rush, it can sometimes mean skipping breakfast, which is not a good idea. Breakfast boosts your metabolism, keeps your blood sugar’s stable. We know it can be hard to find the time or energy, so we’ve put together five of our favourite, quick and nutritious breakfast ideas.

Overnight Oats

This super easy recipe is going to keep you going all morning.

You will need :

  • 50g Porridge Oats
  • 2 tbsp natural yoghurt
  • 50g of mixed berries
  • you can also add Honey / Cinnamon & Nut Butter.
  1.  The night before, stir 100ml of milk or water into your oats with a pinch of salt.
  2. The next morning, loosen up with some additional water if needed. Add yoghurt, berries and any other extras and enjoy.

Omelette

Full of protein and on the table in ten minutes, this one is a winner.

You will need :

  • Three tomatoes
  • Four large eggs
  • 1 tbsp oil
  • 1 tbsp chopped basil
  • 1 tbsp chopped parsley
  1. Fry the tomatoes until they start to soften and colour. Meanwhile, beat the eggs with the herbs into a bowl.
  2. Pour the egg into the pan and stir gently so the egg can set on the base of the pan. Once cooked all the way through, cut into four and serve with the tomatoes.

Homemade Muesli

Packed with oats, dates and berries. This homemade breakfast is full of delicious foods to have you feeling great to start your day.

You will need :

  • 100g oats
  • a handful of Pecan nuts
  • 2 tbsp of sunflower seeds
  • a handful of pitted dates
  • 25g of high fibre puffed wheat
  1. Fry the oats gently, stirring until they start to toast. Add the pecans and seeds to warm before tipping into a bowl to cool.
  2. Mix the dates and puffed wheat, then serve with yoghurt and fresh berries.
